- 12 Medjool dates pitted
- ½ cup creamy peanut butter
- Chocolate Coating
- 1 cup dark chocolate chips or chopped, 70% cocoa or higher
- 1 tsp coconut oil
- ¼ tsp vanilla extract optional

- Flaky sea salt
- Crushed peanuts or shredded coconut
Prep: Line a plate or baking sheet with parchment paper. Slice dates lengthwise and remove pits, keeping dates intact.
Stuff: Fill each date with 1–2 teaspoons of peanut butter. Gently press closed.
Melt chocolate: Melt dark chocolate with coconut oil using a double boiler or microwave in 20-second intervals, stirring until smooth. Stir in vanilla if using.
Dip: Dip each stuffed date into melted chocolate (fully or halfway coated).
Set: Place on parchment. Sprinkle with sea salt or toppings if desired.
Chill: Refrigerate 15–20 minutes until chocolate is set.
