  • 12 Medjool dates pitted
  • ½ cup creamy peanut butter
  • Chocolate Coating
  • 1 cup dark chocolate chips or chopped, 70% cocoa or higher
  • 1 tsp coconut oil
  • ¼ tsp vanilla extract optional

  • Flaky sea salt
  • Crushed peanuts or shredded coconut

Instructions
 

  • Prep: Line a plate or baking sheet with parchment paper. Slice dates lengthwise and remove pits, keeping dates intact.
  • Stuff: Fill each date with 1–2 teaspoons of peanut butter. Gently press closed.
  • Melt chocolate: Melt dark chocolate with coconut oil using a double boiler or microwave in 20-second intervals, stirring until smooth. Stir in vanilla if using.
  • Dip: Dip each stuffed date into melted chocolate (fully or halfway coated).
  • Set: Place on parchment. Sprinkle with sea salt or toppings if desired.
  • Chill: Refrigerate 15–20 minutes until chocolate is set.

Notes

  • Use fresh, soft Medjool dates for the best texture.
  • If chocolate thickens, stir in a little more melted coconut oil.
  • For a cleaner finish, tap off excess chocolate before placing on parchment.
