Ingredients
  

  • 2 tbsp chia seeds
  • ½ cup milk almond, oat, or dairy
  • 1 –2 tsp maple syrup or honey to taste
  • ½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • Pinch of salt
  • Optional toppings: fresh berries banana slices, nuts, seeds, or granola

Instructions
 

  • In a bowl or jar, whisk together milk, maple syrup, vanilla extract, cinnamon, and salt.
  • Add chia seeds and whisk thoroughly for 30–45 seconds.
  • Let sit for 5 minutes, then whisk again to break up clumps.
  • Cover and refrigerate for at least 4 hours, or overnight.
  • Stir before serving and add toppings as desired.

Notes

  • The second whisk after 5 minutes is key to a smooth, clump-free pudding.
  • If pudding is too thick, stir in a splash of milk.
  • If too thin, add 1 tsp chia seeds and chill longer.
