  • ½ cup cherry tomatoes halved (use sparingly for strict keto)
  • 1 cup cucumber chopped
  • ½ cup bell peppers thinly sliced
  • ¼ cup red onion finely diced
  • Protein & Cheese
  • ½ cup sliced salami or pepperoni
  • 1 cup mozzarella pearls or cubed fresh mozzarella
  • Seasonings & Flavor Base
  • ½ cup keto-friendly Italian dressing oil-based, no added sugar
  • 1 tbsp olive oil optional, for richness
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Pantry Add-Ins
  • ¼ cup black or green olives sliced
  • ¼ cup sliced pepperoncini
  • Grated or shaved Parmesan cheese for topping

Instructions
 

  • Pre-Cooking Prep
  • Prepare keto pasta according to package directions.
  • Drain thoroughly and pat dry with paper towels to remove excess moisture.
  • Chop all vegetables into bite-sized pieces.
  • Slice meats and cheese if needed.
  • Assembly
  • In a large bowl, add the prepared pasta substitute.
  • Add tomatoes, cucumber, bell peppers, red onion, olives, and pepperoncini.
  • Add salami and mozzarella.
  • In a small bowl or jar, whisk together Italian dressing, olive oil, Italian seasoning, garlic powder, salt, and pepper.
  • Pour dressing over the salad and toss gently until evenly coated.
