Ingredients
  

  • Main Ingredients
  • 1 cup unsalted butter melted and slightly cooled
  • cups brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • Dry Ingredients
  • cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • Mix-Ins
  • 2 cups circus animal cookies roughly chopped
  • ½ cup white chocolate chips optional

Instructions
 

  • Preheat & Prep
  • Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang. Lightly grease.
  • Mix Wet Ingredients
  • In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.
  • Add Eggs & Vanilla
  • Whisk in eggs and vanilla extract until fully combined.
  • Combine Dry Ingredients
  • In a separate bowl, whisk flour, baking powder, and salt.
  • Make the Batter
  • Gently fold dry ingredients into wet ingredients until just combined.
  • Add Mix-Ins
  • Fold in chopped circus animal cookies and white chocolate chips, if using.
  • Bake
  • Spread batter evenly into prepared pan.
  • Bake 22–26 minutes, until edges are set and the center looks slightly underbaked.
  • Cool & Slice
  • Let blondies cool completely in the pan before slicing for best texture.

Notes

  • Slight underbaking keeps the centers soft and chewy.
  • Do not crush cookies too finely—they should add texture.
  • Blondies firm up as they cool.
