  • –2 lbs boneless skinless chicken breasts or thighs
  • 1 lb baby potatoes halved
  • 3 –4 large carrots cut into thick chunks
  • 2 cups green beans or broccoli florets added later
  • Honey Garlic Sauce
  • ½ cup honey
  • cup soy sauce low-sodium recommended
  • ¼ cup ketchup
  • 4 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • ¼ tsp black pepper
  • Pantry Staples
  • Olive oil or cooking spray
  • Salt lightly, if needed
  • Optional Thickener
  • 1 tbsp cornstarch + 1 tbsp water slurry

Instructions
 

  • Prep the Slow Cooker
  • Lightly grease the slow cooker with cooking spray or olive oil.
  • Add potatoes and carrots in an even layer on the bottom.
  • Season lightly with salt and pepper.
  • Add Chicken
  • Place chicken on top of the vegetables.
  • Make the Sauce
  • In a bowl, whisk together honey, soy sauce, ketchup, garlic, apple cider vinegar, and black pepper.
  • Cook
  • Pour sauce evenly over chicken and vegetables.
  • Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
  • Add Final Veggies
  • Add green beans or broccoli during the last 30–45 minutes of cooking.
  • Optional: Thicken Sauce
  • Remove chicken and veggies.
  • Stir cornstarch slurry into the sauce.
  • Cook on HIGH for 10–15 minutes until thickened.
  • Return chicken and veggies to coat before serving.

Notes

  • Chicken thighs stay juicier if cooking on HIGH.
  • Avoid adding soft vegetables too early to prevent mushiness.
  • Sauce thickens naturally as it cools.
