Easy taco soup is a quick, one-pot dinner made with ground beef, beans, corn, tomatoes, and bold taco seasoning. This hearty, comforting soup is packed with Tex-Mex flavor, perfect for busy weeknights, meal prep, and family-friendly dinners.

Ingredients
  

  • 1 pound lean ground beef
  • 1 small onion diced
  • 1 packet taco seasoning or homemade
  • 1 packet ranch seasoning mix
  • 1 14.5 oz can diced tomatoes
  • 1 15 oz can tomato sauce
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can kidney beans or pinto beans, drained and rinsed
  • 1 cup corn canned or frozen
  • 2 cups beef broth or water
  • Salt and black pepper to taste

Instructions
 

  • In a large pot or Dutch oven, cook ground beef and diced onion over medium heat until beef is browned and onion is soft. Drain excess grease if needed.
  • Stir in taco seasoning and ranch seasoning until the beef is evenly coated.
  • Add diced tomatoes, tomato sauce, beans, corn, and beef broth. Stir well.
  • Bring the soup to a gentle simmer.
  • Reduce heat to low and simmer uncovered for 15–20 minutes, stirring occasionally.
  • Taste and adjust seasoning with salt and pepper.
  • Remove from heat and let rest 5 minutes before serving.

Notes

  • Draining the beef prevents greasy soup and keeps flavors balanced.
  • Simmering—even briefly—greatly improves flavor.
  • Add extra broth if the soup thickens too much.
  • This soup tastes even better the next day.
