Filling

  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work great)
  • Oil for frying

Preparation

  • Begin by peeling, coring, and dicing the apples into small chunks. Set them aside.
  • In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and sugar until well combined.
  • In another bowl, whisk together the milk, eggs, and vanilla extract until blended.
  • Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Fold in the diced apples gently to ensure even distribution.

Cooking

  • In a deep skillet or pot, heat oil over medium heat until it reaches about 350°F (175°C). You can test the temperature by dropping a small spoonful of batter into the oil; it should sizzle immediately.
  • Using a small cookie scoop or spoon, carefully drop the batter into the hot oil, frying a few bites at a time to avoid overcrowding. Fry until golden brown, about 2-3 minutes on each side.
  • Once cooked, transfer the fritter bites to a paper towel-lined plate to absorb excess oil. If desired, dust with powdered sugar while still warm for an extra touch of sweetness.

Notes

Use fresh ingredients for best flavor. Maintain proper oil temperature to avoid greasy fritters. Consider serving with warm caramel sauce or a scoop of vanilla ice cream.
