Ingredients

For the Fish Tacos

  • 1 pound firm white fish (like cod or tilapia), cut into strips Choose fish that holds up well during frying.
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper Adjust based on spice preference.
  • 1 teaspoon salt
  • 1 cup sparkling water For a light, crispy batter.
  • 8 pieces Corn or flour tortillas
  • as needed for frying Oil Use enough oil for deep frying.

For the Mango Salsa

  • 1 piece ripe mango, diced
  • 1 small red onion, finely chopped
  • 1 piece jalapeño, seeded and minced (optional for heat)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • to taste Salt

Optional Toppings

  • Shredded lettuce
  • Sliced avocado
  • Creamy chipotle sauce

Instructions

Preparation

  • In a bowl, combine diced mango, red onion, jalapeño, and cilantro. Squeeze the lime juice over the mixture and add salt to taste. Set aside to let the flavors meld.

Preparing the Fish

  • In a large bowl, mix together the flour, garlic powder, cayenne pepper, and salt. Gradually whisk in the sparkling water until you have a smooth batter.
  • Heat oil in a deep skillet over medium-high heat. Dip the fish strips into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry until golden brown and crispy, about 4-5 minutes. Remove and place on paper towels to drain.

Tortilla Preparation

  • In a dry skillet, warm the tortillas over medium heat for about 30 seconds on each side until pliable.

Assembly

  • Lay a few pieces of fried fish on each tortilla, top with the fresh mango salsa, and add any additional toppings you desire.
  • Serve your tacos immediately, garnished with extra lime wedges, and enjoy your culinary journey to the sunny shores of Baja California!

Notes

Consider sparkling water alternatives like club soda for a lighter batter. Let the salsa rest for at least 15-20 minutes to enhance flavors. Avoid overbattering and ensure oil is hot enough to prevent greasy fish.
