Ingredients
  

  • For the filling:
  • 2 cups apples peeled, diced
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • For the rolls:
  • 8 –10 rice paper sheets
  • 1 –2 tablespoons melted butter or oil
  • Optional toppings:
  • Powdered sugar
  • Caramel sauce
  • Vanilla ice cream

Instructions
 

  • Prepare the apple filling:
  • In a skillet, melt butter and add diced apples. Stir in sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until soft and slightly caramelized. Add vanilla and let cool.
  • Soften rice paper:
  • Dip each rice paper sheet in warm water for a few seconds until soft, then place on a clean surface.
  • Fill and roll:
  • Add a small amount of apple filling to the center. Fold sides inward and roll tightly like a spring roll.
  • Bake:
  • Preheat oven to 375°F (190°C). Place rolls on a lined baking sheet, brush with melted butter or oil, and bake for 15–20 minutes, turning halfway through until golden and crispy.
  • Serve:
  • Let cool slightly, then dust with powdered sugar or drizzle with caramel sauce. Serve with vanilla ice cream if desired.

Notes

  • Do not over-soak rice paper to avoid tearing.
  • Let filling cool before assembling to prevent sticking.
  • Avoid overfilling to keep rolls intact.
  • Flip rolls halfway through baking for even crispiness.
  • Best served fresh, but can be reheated in oven or air fryer.
