  • Nonstick spray for waffle iron
  • Extra maple syrup for serving

Instructions

  • Preheat Waffle Iron:
  • Heat waffle iron and lightly grease with nonstick spray.
  • Prepare Oats (Optional):
  • For a smoother texture, pulse rolled oats in a blender to create coarse oat flour.
  • Mix Dry Ingredients:
  • In a large bowl, whisk together flour, oats (or oat flour), baking powder, baking soda, cinnamon, and salt.
  • Mix Wet Ingredients:
  • In another bowl, whisk eggs, milk, mashed banana, maple syrup, vanilla extract, and melted oil.
  • Combine Batter:
  • Pour wet ingredients into dry ingredients and stir until just combined.
  • Gently fold in grated zucchini and blueberries. Do not overmix.
  • Cook Waffles:
  • Scoop batter into waffle iron.
  • Cook for 3–5 minutes or according to manufacturer instructions, until golden brown and crisp.
  • Cool & Serve:
  • Transfer waffles to a wire rack to keep crisp.
  • Serve warm with maple syrup, fresh fruit, or yogurt.

Notes

  • Squeeze excess moisture from zucchini to prevent soggy waffles.
  • Do not overmix batter to keep waffles light and fluffy.
  • Place cooked waffles on a wire rack instead of stacking to maintain crispness.
  • Store in refrigerator up to 4 days or freeze up to 2 months.
  • Reheat in toaster for best texture.
