  • 4 pieces chicken thighs or breasts bone-in, skin-on recommended for flavor
  • 1 cup BBQ sauce store-bought or homemade
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste pepper
  • for garnish Fresh parsley optional

Instructions
 

Marination

  • In a large bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken pieces, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to overnight for more intense flavor.

Grilling

  • Preheat the grill to medium-high heat, around 375-400°F (190-200°C). If using charcoal, ensure the coals are glowing and covered in ash.
  • Place the marinated chicken on the grill. Close the lid and cook for about 7-8 minutes on each side until you see beautiful grill marks and the internal temperature reaches 165°F (75°C).
  • In the last few minutes of cooking, brush a generous amount of BBQ sauce over the chicken. Close the lid again to let the sauce caramelize and form a sticky glaze.
  • Once fully cooked, remove the chicken from the grill and let it rest for a few minutes. Garnish with fresh parsley, if desired, and serve with extra BBQ sauce on the side.

Notes

Avoid rushing the marination and make sure to let the chicken rest after grilling for optimal flavor.
