  • 2 slices slices of bread (your choice: sourdough, whole grain, or ciabatta)
  • 1 cup cooked chicken, shredded
  • 1/3 cup BBQ sauce (homemade or store-bought)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • Butter (for grilling) Use generously for a crispy exterior

Instructions
 

Preparation

  • In a bowl, combine the shredded chicken and BBQ sauce until evenly coated.
  • Optional: Add smoked paprika or garlic powder for extra flavor.

Assembly

  • Butter one side of each slice of bread.
  • On the unbuttered side, layer half of the shredded cheese, followed by the BBQ chicken mixture, and top it with the remaining cheese.
  • Place the second slice of bread on top, buttered side facing out.

Grilling

  • Heat a skillet over medium heat.
  • Place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
  • Use a spatula to gently press down on the sandwich for even grilling.

Serving

  • Once grilled, remove the sandwich from the skillet and let it cool slightly.
  • Slice it in half to reveal the melty, BBQ-infused layers.
  • Serve with potato chips, a side salad, or simply on its own.

Notes

Use day-old bread for better grilling. Don't rush the grilling process for perfectly melted cheese.
