Ingredients
  

  • * 2 large chicken breasts cut into cubes
  • * 6 cups mixed greens romaine, spinach, or spring mix
  • * 1 cup cherry tomatoes halved
  • * 1 cup corn fresh, grilled, or canned
  • * 1 avocado sliced
  • * ½ red onion thinly sliced
  • * ½ cup BBQ sauce
  • * 2 tablespoons olive oil
  • * 1 teaspoon garlic powder
  • * 1 teaspoon smoked paprika
  • * ½ teaspoon salt
  • * ½ teaspoon black pepper
  • * Optional: ranch dressing or vinaigrette
  • * Optional: shredded cheese tortilla strips, beans

Instructions
 

  • Preheat grill or grill pan to medium-high heat.
  • Thread chicken onto skewers.
  • Toss chicken with olive oil, garlic powder, paprika, salt, and pepper.
  • Lightly oil grill grates and place skewers on the grill.
  • Cook for 10–12 minutes, turning occasionally.
  • Brush BBQ sauce onto chicken during the last 3–4 minutes.
  • Continue cooking until chicken reaches 165°F and is slightly charred.
  • Remove and let rest for a few minutes.
  • In a large bowl, assemble greens, tomatoes, corn, avocado, and onion.
  • Add chicken (on skewers or removed) on top.
  • Drizzle with extra BBQ sauce or dressing if desired and serve.

Notes

  • Add BBQ sauce at the end to prevent burning.
  • Do not overcrowd skewers for even cooking.
  • Avoid overcooking to keep chicken juicy.
  • Let chicken rest before serving for better flavor.
