  • 2 cups finely chopped broccoli Fresh or frozen
  • 1 cup shredded cheese Cheddar or your favorite type
  • 1/2 cup breadcrumbs Panko works great for added crunch
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs Binding agent
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes Optional for a kick

Instructions
 

Preparation

  • If using fresh broccoli, steam it lightly until tender. If using frozen, make sure it’s completely thawed and excess water is squeezed out.
  • In a mixing bowl, combine the chopped broccoli, shredded cheese, breadcrumbs, grated Parmesan, garlic powder, and seasonings. Mix well until everything is evenly coated.
  • Crack the eggs into the mixture and stir thoroughly to bind the ingredients together. The mixture should be sticky but manageable.
  • Using your hands, form small balls or patties about the size of a golf ball. Place them on a lined baking sheet.

Baking

  • Preheat your oven to 400°F (200°C) and bake the bites for 20-25 minutes or until golden brown and crispy on the outside. Flip them halfway for even cooking.

Serving

  • Let them cool for a few minutes and serve warm. They pair beautifully with ranch or marinara sauce.

Notes

For a vegetarian or egg-free version, try replacing the eggs with mashed flaxseeds or a commercial egg replacer. Experiment with different types of cheese for varied flavors!
