Ingredients
  

  • 2 cups fresh apricots chopped
  • 2 cups heavy cream cold
  • 1 cup whole milk
  • 3/4 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 tablespoon lemon juice

Instructions
 

  • Wash, pit, and chop apricots. Blend half into a puree and leave the rest chunky.
  • In a saucepan, heat milk, brown sugar, and salt over medium heat for 3–5 minutes until dissolved (do not boil).
  • Remove from heat and let cool slightly.
  • In a bowl, whisk together heavy cream and cooled milk mixture.
  • Add vanilla, apricot puree, and chopped apricots. Mix gently.
  • Chill mixture in the refrigerator for at least 2 hours.
  • Pour into an ice cream maker and churn for 20–25 minutes until creamy.
  • Transfer to a freezer-safe container and freeze for 3–4 hours until firm.
  • Let sit at room temperature for 5 minutes before serving.
