Instructions
Preparation
- Preheat your oven to 350°F (175°C). Spread the mini pretzels on a baking sheet and bake for about 5 minutes. This step is optional but enhances the crunch.
- In a mixing bowl, combine the creamy peanut butter and powdered sugar. Mix until smooth and well combined.
- Take about a teaspoon of the peanut butter mixture and press it between two pretzels to create a sandwich. Repeat until all pretzel pairs are filled.
Coating
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in 30-second intervals, stirring in between, until melted and smooth.
- Using a fork, dip each pretzel sandwich into the melted chocolate, allowing any excess chocolate to drip off. Place the coated bites onto a parchment-lined baking sheet.
Setting
- Refrigerate the pretzel bites for about 30-60 minutes, or until the chocolate is fully set.
