Cook the Filling
Heat a skillet over medium heat.
Add ground beef and diced onions.
Cook for 6–8 minutes, until beef is browned and onions are soft.
Drain excess grease.
Stir in salt, pepper, garlic powder, onion powder, ketchup, and mustard.
Remove from heat and let cool slightly.
Stir in shredded cheddar and diced pickles.
Assemble the Egg Rolls
Lay an egg roll wrapper in a diamond shape.
Spoon 2–3 tablespoons of filling into the center.
Fold bottom corner over filling.
Fold in both side corners.
Roll tightly toward the top corner.
Seal edge with a small amount of water.
Repeat with remaining wrappers.
Cook
Deep Fry (Crispiest Option):
Heat oil to 350°F (175°C).
Fry egg rolls in batches for 3–4 minutes, until golden brown.
Drain on paper towels.
Bake:
Preheat oven to 400°F (200°C).
Place egg rolls on lined baking sheet.
Lightly spray with cooking oil.
Bake 15–18 minutes, flipping halfway.
Air Fry:
Preheat air fryer to 375°F (190°C).
Spray lightly with oil.
Air fry 8–10 minutes, turning halfway.
Serve
Let cool slightly (filling will be hot).
Slice diagonally if desired.
Serve with dipping sauces.
