Ingredients
  

  • 2 cups cherries fresh or frozen, pitted
  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 2 –3 tablespoons amaretto liqueur
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 tablespoon lemon juice
  • Optional: chopped dark chocolate or almonds

Instructions
 

  • In a saucepan, combine cherries and ¼ cup sugar. Cook for 8–10 minutes until softened.
  • Lightly mash cherries and let cool completely.
  • In a bowl, whisk together cream, milk, remaining sugar, vanilla, and salt until dissolved.
  • Stir in cooled cherry mixture and amaretto.
  • Pour into an ice cream maker and churn for 20–25 minutes until thick.
  • No Ice Cream Maker Option:
  • Pour mixture into a freezer-safe container.
  • Freeze, stirring every 30–45 minutes for 3–4 hours until creamy.
  • Transfer to an airtight container and freeze 2–3 hours to firm up.
  • Let sit at room temperature a few minutes before scooping.

Notes

  • Cook cherries first for better texture and flavor.
  • Avoid adding too much alcohol—it can prevent proper freezing.
  • Chill the mixture before churning for best results.
  • Store in freezer for up to 2 weeks in an airtight container.
  • Let soften slightly before serving for easier scooping.
