- 2 cups cherries fresh or frozen, pitted
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 2 –3 tablespoons amaretto liqueur
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: 1 tablespoon lemon juice
- Optional: chopped dark chocolate or almonds
In a saucepan, combine cherries and ¼ cup sugar. Cook for 8–10 minutes until softened.
Lightly mash cherries and let cool completely.
In a bowl, whisk together cream, milk, remaining sugar, vanilla, and salt until dissolved.
Stir in cooled cherry mixture and amaretto.
Pour into an ice cream maker and churn for 20–25 minutes until thick.
No Ice Cream Maker Option:
Pour mixture into a freezer-safe container.
Freeze, stirring every 30–45 minutes for 3–4 hours until creamy.
Transfer to an airtight container and freeze 2–3 hours to firm up.
Let sit at room temperature a few minutes before scooping.
