  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1 cup fudge frosting (optional)

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper for easy removal.
  • In a large bowl, combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract. Whisk until well blended.
  • In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Stir this dry mix into the wet ingredients until just combined.
  • Fold in the chocolate chips for an extra layer of chocolate goodness.
  • Pour the batter into your prepared baking dish and spread it evenly. Bake for approximately 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Allow the brownies to cool completely in the pan. If you’re feeling indulgent, top them with fudge frosting for a finished touch.

Notes

Choose smaller, firm zucchinis for the best flavor and moisture. Grate the zucchini to ensure it blends seamlessly into the batter. Check for doneness by lightly pressing the brownies to ensure they spring back.
