  • 1 cup corn (fresh or canned) Fresh corn is recommended during the summer.
  • Oil for frying Oil for frying Use enough to cover the bottom of the skillet.

Preparation

  • If using fresh corn, cut the kernels off the cob. If using canned corn, be sure to drain it well.
  • In a large bowl, combine the cornmeal, baking powder, and a pinch of salt. Stir to blend everything together evenly.
  • Add the milk and cracked egg to the dry mixture. Stir gently until you achieve a slightly lumpy batter, avoiding overmixing.
  • Gently fold the corn into the batter, ensuring it is evenly distributed.

Cooking

  • In a large skillet, pour in enough oil to cover the bottom. Heat over medium-high until hot but not smoking.
  • Drop spoonfuls of the batter into the hot oil, leaving space between them. Cook each side for about 3-4 minutes or until golden brown.
  • Remove fritters and drain on paper towels.

Serving

  • Enjoy warm, topped with sour cream or fresh herbs if desired.

Notes

Ensure oil is hot enough before frying for optimal crispness. You can add spices for additional flavor or keep fritters warm in an oven while frying more.
