- 2 cups green peas frozen, no thawing needed
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk or half-and-half warmed slightly
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- Pinch of nutmeg optional
- 2 –3 tablespoons water or broth for cooking peas, if needed
Add peas and water or broth to a medium saucepan.
Bring to a gentle simmer over medium heat and cook 4–5 minutes, until peas are tender and bright green.
Drain peas and set aside.
In the same saucepan, melt butter over medium heat.
Whisk in flour and cook 1 minute, stirring constantly.
Slowly add milk, whisking continuously until smooth.
Simmer 2–3 minutes until the sauce thickens.
Stir peas back into the sauce.
Season with salt, pepper, and optional nutmeg.
