Ingredients

Main Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head cauliflower, chopped into florets
  • 1 cup chicken broth
  • 1 cup heavy cream (or alternative)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Preparation

  • Bring a pot of salted water to a boil. Add your cauliflower florets and cook for about 5-7 minutes or until they are tender but firm. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces along with salt, pepper, and onion powder. Cook for about 6-8 minutes until brown on all sides.
  • Once your chicken is cooked, add the minced garlic to the skillet and sauté for about 30 seconds, allowing it to infuse with the chicken.
  • Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for about 5 minutes, letting the sauce thicken slightly.
  • Add the cooked cauliflower to the skillet and gently stir, ensuring the florets are well coated in the creamy sauce.
  • Transfer to a serving dish and sprinkle with fresh parsley. Enjoy your meal warm!

Notes

For ultimate flavor, season generously and consider adding fresh herbs like thyme or rosemary. You can also top with toasted breadcrumbs for added texture.
