- For the Sauce:
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 cup roasted red peppers jarred or homemade
- ½ cup sun-dried tomatoes oil-packed, drained
- 1 cup heavy cream
- ¼ cup grated Parmesan cheese
- Salt and black pepper to taste
