Crockpot Beef Tips are a classic comfort food made easy in the slow cooker. Tender chunks of beef simmer low and slow in a rich, savory gravy until fork-tender and full of flavor.   • 2 lbs beef stew meat or sirloin tips cut into even pieces
  • 1 medium onion sliced or diced
  • 8 oz mushrooms sliced (optional)
  • Seasonings & Flavor Base
  • 2 cups low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce or tamari
  • 2 cloves garlic minced (or 1 teaspoon garlic powder)
  • 1 packet onion soup mix
  • Pantry Staples
  • 1 –2 tablespoons olive oil
  • Black pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions
 

  • Pat beef dry with paper towels and season lightly with black pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Brown beef in batches until lightly seared on all sides.
  • Transfer beef to a 6-quart crockpot.
  • Add onions and mushrooms on top of the beef.
  • In a bowl, whisk together beef broth, Worcestershire sauce, soy sauce, garlic, and onion soup mix.
  • Pour mixture over the beef.
  • Cover and cook:
  • Low: 7–8 hours
  • High: 4–5 hours
  • Once beef is fork-tender, mix cornstarch and water to form a slurry.
  • Stir slurry into the crockpot, cover, and cook an additional 15–20 minutes until gravy thickens.
  • Taste and adjust seasoning before serving.

Notes

  • Browning the beef adds depth of flavor—don’t skip it if you have time.
  • For extra-thick gravy, add an additional teaspoon of cornstarch slurry.
  • This dish tastes even better the next day as flavors deepen.
