Main Ingredients

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 4 cups beef broth

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper Adjust according to your preference.

Preparation

  • Brown the meat in a skillet over medium heat until fully cooked. Drain any excess fat.
  • Place the cooked beef in the crockpot. Add the kidney beans, black beans, corn, diced tomatoes, carrots, celery, onions, and garlic.
  • Sprinkle in the chili powder, cumin, and add salt and pepper to taste.
  • Pour the beef broth over all the ingredients and stir to combine.

Cooking

  • Cover the crockpot and set it to low for 6 to 8 hours or high for 3 to 4 hours.
  • Check seasoning before serving and adjust salt and pepper if necessary.

Notes

Prepare vegetables the night before for convenience. This soup can be frozen for later use. Consider garnishing with fresh cilantro, avocado, or cheese for added flavor.
