Ingredients
  

For the Broth and Noodles

  • 4 cups chicken or vegetable broth
  • 2 teaspoons soy sauce
  • 1 teaspoon ginger (freshly grated)
  • 1 clove garlic (minced)
  • 2 packs ramen noodles (discard the seasoning packets)
  • 1 cup sliced mushrooms (shiitake or button)
  • 1 cup bok choy (or spinach)
  • 2 green onions sliced for garnish

For the Dumplings

  • 1/2 pound ground beef or chicken (or tofu for vegetarian)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1 teaspoon ginger (grated)
  • 1/2 cup finely chopped green onions
  • Dumpling wrappers (store-bought or homemade)

Instructions
 

Preparation

  • In a bowl, mix the ground meat, soy sauce, sesame oil, salt, ginger, and green onions.
  • Take a dumpling wrapper, place about a teaspoon of filling in the center, and wet the edges with a bit of water. Fold it over and pinch to seal. Repeat until all filling is used.

Cooking the Dumplings

  • Bring a pot of water to a boil. Add the dumplings gradually (don't overcrowd) and cook for about 4-5 minutes or until they float and the wrappers become translucent. Remove and set aside.

Preparing the Broth

  • In a large pot, heat a teaspoon of oil over medium heat. Add the minced garlic and grated ginger, stirring until fragrant (about 1 minute).
  • Pour in the broth and soy sauce, then add the sliced mushrooms. Bring it to a simmer.

Cooking Noodles and Vegetables

  • Add the ramen noodles to the broth and cook for about 3-4 minutes until they are tender.
  • Add bok choy (or spinach) and let it cook for an additional minute.

Assembling the Bowl

  • Ladle the hot ramen and broth into bowls.
  • Top each bowl with the cooked dumplings and garnish with sliced green onions.

Notes

You can customize your dumplings with different fillings like shrimp, or even vegetarian options. Consider making your own dumpling wrappers for an extra touch.
