For the Bars

  • 2 cups fresh or frozen blueberries If using frozen, thaw and drain excess liquid.
  • 1 cup granulated sugar Can be substituted with maple syrup or honey.
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1 cup rolled oats Ensure oats are certified gluten-free if necessary.
  • ½ cup unsalted butter, melted Can be replaced with coconut oil for a vegan version.
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon Optional: experiment with nutmeg or cardamom.

Preparation

  • Preheat your oven to 350°F (175°C) and grease or line a 9x9 inch baking pan with parchment paper.
  • In a large bowl, combine the granulated sugar, flour, oats, baking powder, cinnamon, and salt.
  • Stir in the melted butter and vanilla extract until the mixture is crumbly yet moist.

Assembly

  • Reserve about a cup of the mixture for the topping.
  • Press the remaining mixture into the bottom of the pan evenly.
  • Scatter the blueberries over the crust, allowing them to nestle in slightly.
  • Crumble the reserved mixture over the blueberries.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and a toothpick comes out clean.

Cooling

  • Allow the bars to cool in the pan before slicing into squares.
  • Enjoy them as a sweet snack or a delightful dessert.

Notes

Serve warm or at room temperature. Pairs well with whipped cream or ice cream. Store in an airtight container in the fridge for up to five days or freeze for up to three months.
