- Soup Base
- 1 tablespoon olive oil
- 1 lb ground beef or Italian sausage
- 1 medium onion diced
- 3 cloves garlic minced
- 2 tablespoons tomato paste
- 1 28 oz can crushed tomatoes
- 6 cups chicken or beef broth
- 1½ teaspoons Italian seasoning
- ¾ teaspoon salt adjust to taste
- ½ teaspoon black pepper
- 8 lasagna noodles broken into bite-size pieces
- Cheese Topping
- ¾ cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
Heat olive oil in a large pot or Dutch oven over medium heat.
Add ground meat and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
Add onion and cook 3–4 minutes, until softened.
Stir in garlic and cook 30 seconds, until fragrant.
Add tomato paste and stir until combined.
Pour in crushed tomatoes and broth.
Stir in Italian seasoning, salt, and black pepper.
Bring to a gentle boil, then add broken lasagna noodles.
Reduce heat and simmer 15–20 minutes, stirring occasionally, until noodles are tender.
Remove from heat and rest 5 minutes before serving.
