  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, deseeded and minced Adjust to taste.
  • 1 juice lime Juice of 1 lime.
  • Salt To taste.

Preparation

  • Start by dicing the fresh pineapple into small, bite-sized pieces.
  • Halve the cherry tomatoes, chop the red onion, and mince the jalapeño.

Combining

  • In a mixing bowl, combine the diced pineapple, halved cherry tomatoes, chopped red onion, minced jalapeño, and chopped cilantro.

Seasoning

  • Squeeze the juice of one lime over the mixture and sprinkle with salt.
  • Toss everything gently until well combined. Taste and adjust the seasoning if needed.

Chilling

  • For the best flavor, let the salsa sit for at least 30 minutes in the fridge to allow the flavors to meld together.
  • Serve chilled with tortilla chips or as a topping on your grilled favorites.

Notes

Use fresh pineapple for best results. Adjust lime juice and salt to taste. Letting salsa rest enhances the flavors.
