  • cups plain Greek yogurt full-fat or 2%
  • ½ cup finely chopped cucumber or tomato seeds removed
  • Seasonings Sauces, or Flavor Base
  • 1 tablespoon olive oil plus more for drizzling
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove finely grated or minced
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  • Pantry Staples Optional Add-Ins
  • 1 –2 tablespoons fresh herbs dill, parsley, or chives, finely chopped
  • 1 tablespoon pumpkin seeds sesame seeds, or chopped walnuts
  • ¼ teaspoon paprika cumin, or za’atar
  • Optional boosters: 1 teaspoon Dijon mustard or tahini or chili oil

Instructions
 

  • Let yogurt sit at room temperature for 10–15 minutes to remove the chill.
  • Add yogurt to a mixing bowl and stir until smooth and creamy.
  • Mix in olive oil, lemon juice, garlic, salt, and black pepper.
  • Fold in chopped cucumber or tomato and fresh herbs.
  • Taste and adjust seasoning as needed.
  • Rest for 5 minutes to allow flavors to meld.
  • Finish with a drizzle of olive oil and desired toppings before serving.

Notes

  • Use thick Greek yogurt for a rich, dip-like consistency.
  • Pat vegetables dry to prevent a watery texture.
  • A pinch of salt and acid (lemon) makes all the difference.
