- Main Ingredients:
- 2 cups shelled edamame fresh or frozen, thawed and cooked if frozen
- 2 tablespoons tahini
- 2 tablespoons olive oil
- 2 –3 tablespoons fresh lemon juice
- 1 –2 garlic cloves
- Seasonings & Flavor Base:
- ½ teaspoon salt adjust to taste
- ¼ teaspoon black pepper
- Optional: pinch of cumin
- Optional: small handful fresh parsley or cilantro
- Pantry Staples:
- 2 –4 tablespoons water as needed for blending
- Extra olive oil for drizzling
- Paprika or sesame seeds for garnish
Prepare Edamame:
If using frozen edamame, boil for 3–5 minutes until tender.
Drain and let cool slightly.
Blend Ingredients:
Add edamame, tahini, olive oil, lemon juice, garlic, salt, and pepper to a food processor.
Blend until mixture begins to smooth out.
Adjust Texture:
Scrape down sides.
Add 1–2 tablespoons water at a time and continue blending until smooth and creamy (about 1–2 minutes).
Taste & Adjust:
Adjust lemon juice or salt as needed.
Blend again briefly to combine.
Serve:
Transfer to a serving bowl.
Drizzle with olive oil and sprinkle with paprika, sesame seeds, or fresh herbs.
