Ingredients

Main Ingredients

  • 4 pieces ears of corn, husked
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 1 cup cotija cheese, crumbled Can substitute with feta or queso fresco
  • 1 teaspoon chili powder Adjust to taste
  • 1 tablespoon fresh lime juice
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

Preparation

  • Start by husking the corn and removing the silk. Make sure to break off any excess stem for a cleaner presentation.

Grilling

  • Preheat your grill to medium-high heat. Once hot, place each ear of corn directly on the grill. Turn occasionally, allowing the corn to cook for about 10-15 minutes until it’s tender and has char marks on all sides.

Making the Sauce

  • While your corn is grilling, mix mayonnaise, sour cream, lime juice, and salt in a bowl. Adjust seasoning as needed and set aside.

Assembly

  • Once the corn is grilled, take it off the heat and roll it in the creamy mixture until well coated.

Topping

  • Sprinkle the cotija cheese generously over the coated corn and finish with a sprinkle of chili powder for that spicy kick.

Garnishing and Serving

  • Garnish with chopped cilantro before serving. You can serve with extra lime wedges for guests to squeeze on top.

Notes

Pro Tips: Consider adding avocado for a richer texture. If you love spice, try adding cayenne pepper or swapping out the chili powder for a spicy chili paste. Use fresh ingredients, especially lime juice, for a brighter flavor.
