Ingredients
  

For the Fruit Salsa

  • 2 cups diced strawberries
  • 1 cup diced mango
  • 1 cup diced kiwi
  • 1 cup diced pineapple
  • 1/2 cup red onion, finely chopped (optional) adds unexpected savory flavor
  • 1/4 cup fresh mint leaves, chopped for freshness
  • 1 each Juice of 1 lime enhances flavor and keeps fruits fresh
  • 2 tablespoons honey or agave syrup (optional) to sweeten if desired

For the Cinnamon Sugar Chips

  • 6-8 each flour or corn tortillas for making the chips
  • 1/4 cup sugar
  • 1 tablespoon cinnamon
  • 1/4 cup melted butter or coconut oil for brushing the tortillas

Instructions
 

Prepare the Fresh Fruit Salsa

  • In a large mixing bowl, combine the diced strawberries, mango, kiwi, and pineapple. If using, add the chopped red onion.
  • Toss in the fresh mint leaves and lime juice to enhance the flavor.
  • If you prefer a sweeter salsa, add honey or agave syrup and mix gently.
  • Let the salsa sit in the refrigerator for at least 30 minutes.

Make the Cinnamon Sugar Chips

  • Preheat your oven to 350°F (175°C).
  • Cut the tortillas into wedges or strips.
  • In a small bowl, mix the sugar with the cinnamon. Brush both sides of the tortilla wedges with melted butter or coconut oil and sprinkle with the cinnamon sugar.
  • Arrange the coated tortilla pieces on a baking sheet in a single layer. Bake for 10-12 minutes until golden and crispy.
  • Let the chips cool for a few minutes before serving.

Notes

Use seasonal fruits for the best flavor. You can prepare the salsa ahead of time but add the mint and lime juice before serving.
