Ingredients
  

  • 1 chocolate cookie crust store-bought or homemade
  • 8 oz cream cheese softened
  • 1 cup heavy whipping cream very cold
  • ¾ cup powdered sugar
  • 1 teaspoon mint extract
  • ½ teaspoon vanilla extract
  • 1 –2 tablespoons crème de menthe optional
  • Green food coloring optional
  • Chocolate shavings or chips for garnish

Instructions
 

  • Chill a mixing bowl and beaters for 10 minutes to help the cream whip properly.
  • In a large bowl, beat softened cream cheese until smooth and fluffy.
  • Add powdered sugar, mint extract, vanilla extract, and crème de menthe (if using). Mix until well combined.
  • In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the mint mixture until light and airy.
  • Add a few drops of green food coloring if desired and fold gently.
  • Spoon the filling into the chocolate cookie crust and smooth the top.
  • Refrigerate for at least 4 hours, or overnight, until fully set.
  • Garnish with chocolate shavings or chips before serving.

Notes

  • Use mint extract sparingly—too much can overpower the pie.
  • For cleaner slices, freeze the pie for 20–30 minutes before cutting.
  • This pie tastes even better after chilling overnight.
