- 1 cup heavy whipping cream very cold
- ¾ cup powdered sugar
- 1 teaspoon mint extract
- ½ teaspoon vanilla extract
- 1 –2 tablespoons crème de menthe optional
- Green food coloring optional
- Chocolate shavings or chips for garnish
Chill a mixing bowl and beaters for 10 minutes to help the cream whip properly.
In a large bowl, beat softened cream cheese until smooth and fluffy.
Add powdered sugar, mint extract, vanilla extract, and crème de menthe (if using). Mix until well combined.
In a separate chilled bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the mint mixture until light and airy.
Add a few drops of green food coloring if desired and fold gently.
Spoon the filling into the chocolate cookie crust and smooth the top.
Refrigerate for at least 4 hours, or overnight, until fully set.
Garnish with chocolate shavings or chips before serving.
