Grilled Chicken with Cherry Dr Pepper BBQ Sauce

Ingredients
  

For the chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • to taste Salt

For the Cherry Dr Pepper BBQ sauce

  • 1 can Cherry Dr Pepper (12 oz)
  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/3 cup brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • to taste Salt
  • to taste Pepper

Preparation

  • In a bowl, combine the olive oil, salt, and pepper. Coat the chicken breasts evenly with the mixture. Let them marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).

Making the BBQ Sauce

  • In a medium saucepan, combine the Cherry Dr Pepper, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir together and bring to a gentle boil over medium heat. Reduce heat and let it simmer for 15-20 minutes until it thickens slightly.

Grilling

  • Preheat your grill to medium-high heat (about 400°F / 200°C).
  • Once the grill is hot, place the marinated chicken breasts on it. Grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). During the last 5 minutes of grilling, brush a generous amount of the Cherry Dr Pepper BBQ sauce over the chicken.
  • Remove the chicken from the grill and let it rest for a few minutes. Serve it warm, drizzled with more BBQ sauce if desired.

Notes

Use a meat thermometer to ensure your chicken is perfectly cooked. You can prepare the BBQ sauce in advance and store it in the refrigerator for up to a week. Adjust the sweetness of the sauce to your liking by reducing the brown sugar if preferred.
