For the Grilled Green Tomatoes

  • 1 pound green tomatoes Firm, unblemished
  • 2 tablespoons cooking oil (grape seed or olive oil)
  • 3 cloves garlic, minced
  • 1 teaspoon brown sugar
  • 1 tablespoon Worcestershire sauce Can substitute with fish sauce or soy sauce
  • to taste Salt
  • to taste Fresh cracked black pepper
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh basil leaves

Preparation

  • Preheat your grill to medium-high. If using a charcoal grill, let the coals burn down until covered with white ash.
  • Slice the green tomatoes into 1/2-inch thick rounds to allow for even grilling.
  • In a mixing bowl, combine the cooking oil, minced garlic, brown sugar, Worcestershire sauce, salt, and pepper. Stir until well blended.
  • Brush each tomato slice with the marinade, ensuring an even coating and let sit for about 15 minutes.

Grilling

  • Place the marinated tomato slices on the preheated grill. Grill each side for about 3-4 minutes until they develop grill marks and are tender.
  • Upon removing from the grill, sprinkle the tomatoes with grated parmesan cheese and fresh basil.
  • Arrange the grilled green tomatoes on a platter and serve.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat in the oven or serve chilled in salads.
