Ingredients
  

For the Kabobs

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch cubes Opt for fresh, ripe pineapple for the best flavor.
  • as needed Fresh bell peppers (red, yellow, or green), cut into similar-sized pieces
  • as needed Wooden or metal skewers If using wooden, soak them in water for 30 minutes.

For the Marinade

  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated (optional)
  • to taste Salt and pepper
  • 1 Juice of lime

Instructions
 

Preparation

  • In a mixing bowl, whisk together the soy sauce, olive oil, brown sugar, minced garlic, ginger, lime juice, and a pinch of salt and pepper.
  • Add the chicken cubes to the marinade, stirring to coat well. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for enhanced flavor).

Assembly

  • Thread the marinated chicken, pineapple chunks, and bell pepper pieces onto the skewers, alternating for a vibrant presentation.

Cooking

  • Heat your grill to medium-high. If you are using a grill pan, preheat it on medium heat.
  • Place the kabobs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.
  • Remove from the grill and let them rest for a couple of minutes before serving.

Notes

Choose fresh ingredients for best results and don’t overcrowd the skewers for even cooking.
