Ingredients
  

  • * 1 fresh pineapple peeled, cored, sliced
  • * 6 cups mixed greens spinach, arugula, or spring mix
  • * 1 red bell pepper sliced
  • * 1 cucumber thinly sliced
  • * ½ red onion thinly sliced
  • * 1 avocado sliced
  • * 1–2 tablespoons olive oil
  • * Pinch of salt
  • * ¼ cup mayonnaise
  • * 2 tablespoons orange juice fresh
  • * 1 tablespoon lemon juice
  • * 1 tablespoon honey
  • * 1 teaspoon Dijon mustard
  • * 1 tablespoon olive oil
  • * Salt and pepper to taste
  • * Optional: nuts seeds, feta cheese, grilled chicken

Instructions
 

  • Preheat grill or grill pan to medium-high heat.
  • Lightly brush pineapple with olive oil and a pinch of salt.
  • Grill pineapple for 2–3 minutes per side until lightly charred.
  • Remove and let cool, then cut into bite-sized pieces.
  • In a bowl, whisk together mayonnaise, orange juice, lemon juice, honey, Dijon mustard, olive oil, salt, and pepper.
  • In a large bowl, combine greens, bell pepper, cucumber, onion, and avocado.
  • Add grilled pineapple to the salad.
  • Drizzle dressing over the salad or serve on the side.
  • Toss gently and serve immediately.

Notes

  • Do not overcook pineapple to keep its texture.
  • Lightly oil pineapple to prevent sticking on the grill.
  • Adjust sweetness and tang with honey or citrus juice.
  • Add dressing gradually to avoid overdressing.
