- * 6 cups mixed greens spinach, arugula, or spring mix
- * 1 red bell pepper sliced
- * 1 cucumber thinly sliced
- * ½ red onion thinly sliced
- * 1 avocado sliced
- * 1–2 tablespoons olive oil
- * Pinch of salt
- * ¼ cup mayonnaise
- * 2 tablespoons orange juice fresh
- * 1 tablespoon lemon juice
- * 1 tablespoon honey
- * 1 teaspoon Dijon mustard
- * 1 tablespoon olive oil
- * Salt and pepper to taste
- * Optional: nuts seeds, feta cheese, grilled chicken
Preheat grill or grill pan to medium-high heat.
Lightly brush pineapple with olive oil and a pinch of salt.
