Ingredients
  

  • 1 tablespoon olive oil or avocado oil
  • 1 lb ground turkey 93/7 recommended
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated or minced
  • 1 14–16 oz bag coleslaw mix (shredded cabbage & carrots)
  • 3 tablespoons soy sauce or coconut aminos
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and black pepper to taste
  • Green onions sliced (for garnish)
  • Sesame seeds optional, for topping

Instructions
 

  • Heat oil in a large skillet over medium heat.
  • Add ground turkey and cook, breaking it up, until mostly cooked through.
  • Add diced onion and cook for 3–4 minutes until softened.
  • Stir in garlic and ginger; cook for 30 seconds until fragrant.
  • Add coleslaw mix and stir well to combine.
  • Pour in soy sauce (or coconut aminos), rice vinegar, and sesame oil.
  • Cook for 5–7 minutes, stirring often, until cabbage is tender but still slightly crisp.
  • Season with salt and black pepper to taste.
  • Remove from heat and rest for 2–3 minutes.
  • Garnish with green onions and sesame seeds before serving.

Notes

  • Don’t overcook the cabbage—it should be tender with a little crunch.
  • Sesame oil is strong; a small amount goes a long way.
  • If the mixture looks watery, cook uncovered for a few extra minutes.
