  • 4 pieces Chicken Thighs (bone-in or boneless)
  • 1 small Fresh Pineapple, cut into chunks Canned pineapple works if fresh isn’t available
  • 1 pieces Red Bell Pepper, sliced
  • 1 pieces Yellow Bell Pepper, sliced
  • 1 medium Red Onion, cut into wedges
  • 1/4 cup Soy Sauce
  • 2 tablespoons Brown Sugar
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh Ginger, grated
  • 2 tablespoons Olive Oil
  • Sesame Seeds, for garnish
  • Fresh Cilantro, for garnish
  • Salt and Pepper, to taste

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, and olive oil. Stir until the sugar dissolves.
  • Place the chicken thighs in a resealable bag or bowl, pour the marinade over them, and let marinate for at least 30 minutes.
  • On a large sheet pan, arrange the marinated chicken, pineapple chunks, sliced bell peppers, and onion wedges. Drizzle any leftover marinade on top.

Cooking

  • Sprinkle salt and pepper over the veggies and drizzle a little olive oil. Bake for about 35-40 minutes, or until the chicken is cooked through (165°F or 74°C).
  • Once out of the oven, let it rest for a few minutes. Sprinkle with sesame seeds and fresh cilantro before serving.

Notes

Try different proteins like shrimp or tofu, add more veggies for nutrition, and consider using leftovers in tacos or salads.
