- 4 large eggs
- 1 cup fresh spinach roughly chopped
- ½ cup bell pepper finely diced
- ¼ cup red onion thinly sliced
- ½ cup cherry tomatoes halved
- Seasonings Sauces, or Flavor Base
- 1 tablespoon olive oil or avocado oil
- ½ teaspoon garlic powder
- ¼ teaspoon fine sea salt
- ¼ teaspoon black pepper
- Optional: ¼ cup hummus or plain Greek yogurt as sauce base
- Pantry Staples
- ½ cup shredded mozzarella or crumbled feta cheese
- ¼ cup cottage cheese or Greek yogurt optional, for extra protein
- Red pepper flakes to taste (optional)
- Fresh herbs basil or parsley, for garnish
Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
Place flatbreads on the baking sheet. Lightly brush with olive oil or spread a thin layer of hummus or Greek yogurt.
Sprinkle cheese evenly over each flatbread.
Distribute spinach, bell pepper, onion, and tomatoes evenly on top.
Crack 2 eggs onto each pizza or add softly scrambled eggs.
Season with garlic powder, salt, and black pepper.
Bake for 10–14 minutes, until egg whites are set and crust edges are golden.
Remove from oven and rest for 2–3 minutes before slicing.
Garnish with herbs, cottage cheese, or red pepper flakes if desired.
