Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon for the batter

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh or canned peaches

Streusel Topping

  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour for streusel
  • 1/4 teaspoon ground cinnamon for streusel
  • 2 tablespoons cold butter for streusel

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line your muffin tin with liners or lightly grease it.
  • In a large bowl, whisk together the dry ingredients: flour, granulated sugar, baking powder, salt, and ground cinnamon.
  • In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until blended.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in the diced peaches.
  • For the streusel topping, mix together brown sugar, flour, and cinnamon; cut in the cold butter until crumbly.
  • Spoon the batter into the muffin tin, filling each cup two-thirds full.
  • Sprinkle the streusel topping generously over the batter.
  • Bake for 18-20 minutes, or until a toothpick comes out clean.
  • Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Use fresh peaches for the best flavor. For a twist, try mixing in other fruits or additional spices.
