Ingredients
  

Mochi Ingredients

  • 1 cup glutinous rice flour (mochi flour)
  • 1/2 cup granulated sugar
  • 3/4 cup water
  • 1/2 cup fresh strawberries, pureed
  • to taste cornstarch or potato starch, for dusting

Optional Filling

  • to taste sweetened red bean paste For additional filling

Instructions
 

Preparation

  • Wash and hull the strawberries, then blend them until smooth. Set aside about 1/2 cup for your mochi filling.
  • In a microwave-safe bowl, combine the glutinous rice flour, sugar, and water. Mix until there are no lumps.
  • Microwave the mixture for about 1 minute. Stir well, then microwave it again for another minute. Stir again, and finally microwave for an additional 30 seconds to achieve a sticky, stretchy dough.

Shaping the Mochi

  • Allow the dough to cool slightly, then dust your workspace with cornstarch. Divide the dough into small portions, about the size of a golf ball.
  • Flatten each ball in your hand, spoon a small amount of strawberry puree in the center. If using red bean paste, add that as well.
  • Carefully pinch the edges together to seal the mochi, dusting with cornstarch to prevent sticking.

Cooling and Serving

  • Place the filled mochi on a tray and let them cool fully. Once they’ve set, they’re ready to be enjoyed.

Notes

Allow the mochi to cool completely to help them hold their shape. Experimenting with flavors like vanilla or matcha can add a unique twist.
