  • 2 count ripe kiwis, peeled and chopped
  • 2 cups watermelon, cubed and seeded
  • 1 tablespoon honey or maple syrup (optional, to taste) Use to sweeten the popsicles if necessary.

Preparation

  • Peel and chop the kiwis and cube the watermelon, ensuring the watermelon is free of seeds for a smoother texture.
  • Place the watermelon cubes into a blender and blend until smooth. Strain if a smoother consistency is desired.
  • Taste the blended watermelon; if it's not sweet enough, add a tablespoon of honey or maple syrup and blend again.
  • Pour a layer of the watermelon puree into the popsicle molds, filling them about a third of the way. Then, add a layer of chopped kiwi on top.
  • Pour in more watermelon puree until the molds are nearly full, leaving a little space for expansion as they freeze.
  • Insert the popsicle sticks in the center of each mold, and transfer the molds to the freezer. Freeze for at least 4–6 hours until solid.
  • To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull the popsicles out.

Notes

Experiment with adding a splash of lime juice for a zesty twist or other fruits like strawberries or mangoes for variety. For a creamier texture, consider adding a splash of coconut milk into the watermelon blend.
