Instructions
 

Marinate the Chicken

  • In a bowl, combine the soy sauce, gochujang, brown sugar, sesame oil, garlic, ginger, and rice vinegar. Whisk until well mixed.
  • Add the chicken thighs, ensuring they are well coated in the marinade. Allow them to marinate for at least 30 minutes (or up to overnight in the fridge for maximum flavor).

Cook the Chicken

  • Heat a grill pan or skillet over medium-high heat. Sear the marinated chicken on each side for about 6-7 minutes or until fully cooked and slightly charred.
  • Once done, let it rest for a few minutes before slicing it into bite-sized pieces.

Assemble the Bowls

  • In each bowl, place a generous scoop of cooked rice as the base.
  • Top it with sliced chicken, cucumber, shredded carrots, and edamame. If desired, add kimchi for an extra kick of flavor.
