Ingredients
  

  • For the cream layer:
  • 1 cup coconut cream chilled
  • 1/2 cup dairy-free cream cheese or whipped topping
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the mango layer:
  • 2 cups fresh mango puree
  • 1 tablespoon lemon juice
  • For the base:
  • 20 –24 ladyfinger biscuits eggless if needed
  • 1/2 cup mango juice or plant-based milk
  • Optional toppings:
  • Fresh mango cubes
  • Shredded coconut
  • Mint leaves

Instructions
 

  • Blend fresh mangoes into a smooth puree and mix with lemon juice. Set aside.
  • In a bowl, whip chilled coconut cream until fluffy.
  • Add dairy-free cream cheese, powdered sugar, and vanilla extract, and mix until smooth.
  • Quickly dip ladyfinger biscuits into mango juice or plant-based milk (do not soak too long).
  • In a serving dish, layer soaked ladyfingers, cream mixture, and mango puree.
  • Repeat layers until all ingredients are used, finishing with cream or mango on top.
  • Refrigerate for 4–6 hours or overnight until set.

  • Use ripe mangoes for the best flavor.
  • Chill coconut cream overnight for better whipping.
  • Avoid over-soaking biscuits to prevent sogginess.
  • Layer evenly for better texture and presentation.
  • Let the dessert rest overnight for enhanced flavor.
