- For the cream layer:
- 1 cup coconut cream chilled
- 1/2 cup dairy-free cream cheese or whipped topping
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- For the mango layer:
- 2 cups fresh mango puree
- 1 tablespoon lemon juice
- For the base:
- 20 –24 ladyfinger biscuits eggless if needed
- 1/2 cup mango juice or plant-based milk
- Optional toppings:
- Fresh mango cubes
- Shredded coconut
- Mint leaves
Blend fresh mangoes into a smooth puree and mix with lemon juice. Set aside.
In a bowl, whip chilled coconut cream until fluffy.
