  • 1 cup cashews Raw cashews work best.
  • 1 cup dates, pitted Ensure dates are soft; soak in warm water if needed.
  • 2 tablespoons matcha powder Use culinary-grade matcha for best results.
  • 1/2 cup pistachios Optional; can be substituted with other nuts.
  • 1/2 cup shredded coconut Unsweetened coconut is preferred.
  • 1 tablespoon coconut oil (optional) Enhances texture if used.
  • a pinch salt Enhances flavor.

Instructions
 

Preparation

  • Start by measuring out all your ingredients. Ensure your dates are pitted and soft. If they’re hard, soak them in warm water for about 10 minutes to soften.

Blending

  • In a food processor, combine the cashews and pitted dates. Pulse until the mixture is crumbly but sticks together when pressed.
  • Sprinkle in the matcha powder, pistachios, shredded coconut, and salt. If you’re using coconut oil, add it now. Pulse again until everything is well combined.

Forming the Balls

  • With clean hands, take small portions of the mixture and roll them into bite-sized balls. You can make them as small or as large as you prefer.
  • For an extra touch, roll the energy balls in some shredded coconut or crushed nuts for added texture.

Chilling

  • Place the balls on a baking sheet lined with parchment and refrigerate for 30 minutes to an hour. Enjoy them chilled or at room temperature.

Notes

Store your matcha energy balls in an airtight container in the refrigerator for up to a week. They can also be frozen for longer shelf life—just thaw them before enjoying. Experiment with different nuts or seeds based on your preferences.
