  • 1/4 cup honey, maple syrup, or your preferred sweetener Adjust based on sweetness preference
  • 1 teaspoon vanilla extract Adds flavor depth
  • 1 tablespoon lemon juice For a zesty flavor

Instructions

Preparation

  • Preheat the Oven: Set your oven to 350°F (175°C) and prepare your muffin tin by greasing it lightly.
  • Make the Crust: In a bowl, combine the almond flour, melted coconut oil, sweetener, and salt. Mix well and evenly distribute the mixture into each muffin cup, pressing down to form a solid base.
  • Bake the Crust: Place the crusts in the oven and bake for about 10-12 minutes or until lightly golden. Remove and let cool.

Filling

  • Prepare the Filling: In another bowl, blend the Greek yogurt (or cottage cheese), protein powder, sweetener, vanilla extract, and lemon juice until smooth and creamy.
  • Fill the Cups: Spoon the filling on top of the cooled crusts, smoothing the tops as desired.
  • Bake Again: Return to the oven and bake for another 15-20 minutes until set. The center should slightly jiggle but not be liquid.

Cooling

  • Cool and Chill: Allow the cheesecakes to cool at room temperature, then transfer them to the fridge for at least 2 hours to set further.
  • Serve and Enjoy: Serve chilled, or top with fresh berries, nut butter, or a drizzle of honey.
