- ½ cup melted butter
- ¼ cup sugar
- Coconut Caramel Layer
- 2 cups shredded coconut toasted
- 1½ cups soft caramels or caramel sauce
- 2 –3 tablespoons milk or cream
- Chocolate
- 1 cup chocolate chips melted
Toast shredded coconut in a pan over medium heat until golden brown, stirring frequently.
Mix graham cracker crumbs, melted butter, and sugar until combined.
Form into small cookie bases or press and cut into shapes.
Melt caramels with milk or cream until smooth.
Stir toasted coconut into the caramel mixture.
Spoon the mixture onto each cookie base and press gently.
Dip the bottoms in melted chocolate and place on parchment paper.
Drizzle chocolate over the tops.
Refrigerate for 30–60 minutes until set.
