Ingredients
  

  • Base
  • 2 cups graham cracker crumbs or crushed cookies
  • ½ cup melted butter
  • ¼ cup sugar
  • Coconut Caramel Layer
  • 2 cups shredded coconut toasted
  • cups soft caramels or caramel sauce
  • 2 –3 tablespoons milk or cream
  • Chocolate
  • 1 cup chocolate chips melted

Instructions
 

  • Toast shredded coconut in a pan over medium heat until golden brown, stirring frequently.
  • Mix graham cracker crumbs, melted butter, and sugar until combined.
  • Form into small cookie bases or press and cut into shapes.
  • Melt caramels with milk or cream until smooth.
  • Stir toasted coconut into the caramel mixture.
  • Spoon the mixture onto each cookie base and press gently.
  • Dip the bottoms in melted chocolate and place on parchment paper.
  • Drizzle chocolate over the tops.
  • Refrigerate for 30–60 minutes until set.

Notes

  • Stir coconut constantly while toasting to prevent burning.
  • Use soft caramels for smoother melting.
  • Work quickly when assembling, as caramel sets fast.
  • Store in the fridge up to 1 week or freeze up to 2 months.
