  • cups rolled oats
  • 1 cup fresh spinach
  • 1 ripe banana
  • 1 cup milk any type
  • 1 large egg
  • 1 tablespoon coconut oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup

Instructions

  • Add rolled oats, spinach, banana, milk, egg, coconut oil (or melted butter), vanilla extract, baking powder, cinnamon, and honey (or maple syrup) to a blender.
  • Blend until the mixture becomes a smooth waffle batter.
  • Let the batter rest for 5 minutes so the oats absorb the liquid.
  • Preheat a waffle maker and lightly grease it with oil or cooking spray.
  • Pour enough batter into the waffle iron to cover the surface evenly.
  • Cook for 4–5 minutes or until the waffles are golden and crisp.
  • Carefully remove the waffles and place them on a cooling rack for a minute to maintain crispness.
  • Serve warm with your favorite toppings.

Notes

  • Blend the oats thoroughly so the batter becomes smooth and well combined.
  • Allowing the batter to rest briefly helps the waffles hold together better.
  • Avoid overfilling the waffle maker to ensure even cooking.
  • Cooked waffles can be frozen and reheated in a toaster for quick breakfasts.
